Jenny StringerIt finally feels like spring is just round the corner and with it comes the end of the Intermediate Term for the professional students. We always mark the end of this term with a canapé night at the School. The students make the canapés and then invite friends and family to join them for a glass of Prosecco and enjoy their creations.  We also hold a raffle for charity on the night, this year we chose to sponsor The Army Benevolent Fund and Womankind Worldwide rasing a total of £1,220 which will be divided equally. Prizes included a 6 month subscription to BBC Good Food Magazine, hand painted pottery, signed cookery books and lots of other goodies.

With the sun making an appearance and the nights getting longer we hope you will join us here for one of our many evening classes we have lined up, including 'Matching Food with Wine', 'Confident Cooking Classes' and  'Carving Demonstrations'

The new classes we added in February proved very popular and we are delighted to say we have added yet more new classes.  The latest classes to be added are two new vegetarian cookery classes with guest teachers from the renowned Vegetarian Cookery School, ⁰Cordon Vert and Jane Nemazee will be sharing family Middle Eastern recipes on our 'Taste of the Spice Route' daytime class.

Furthermore, for all you busy mothers out there, if you are looking for culinary inspiration we have created a daytime Quick and Easy Class to fit round the school run and get you out of the cooking rut.

EVENING CLASSES AT LEITHS
Matching Food with WineLeiths comes alive in the evenings with a whole range of classes from cookery classes to a wonderful range or drinks classes.   Starting 21 April we are holding two evening cookery classes, one for those new to the kitchen and one for more confident cooks. Starting at 6.30pm and running weekly for 10 sessions these classes are aimed at busy individuals who want hands on cookery classes learning new and exciting dishes.  There are still some places available so get in touch as soon as possible. 

Or if you are keen on developing your palate our evening drinks classes may be the answer.  We are lucky enough to have two professional MW's taking the classes.  Nancy Gilchrist MW, will take you through Matching Food With Wine or taste and assess 6 Champagnes with Richard Bampfield MW and Champagne Ambassador 2009.  These classes also make fantastic gifts if you are looking inspiration.
 
⁰CORDON VERT TEACHERS COME TO LEITHS
Green TomatosThe vegetarian society's official cookery school, ⁰Cordon Vert, run a range or exciting classes and we are thrilled that two of their teachers will be coming to teach at Leiths.  Whether you are a vegetarian looking for ideas or simply looking to reduce your meat intake, Marise Maddison and Sarah Kearns will teach you to cook some delicious vegetarian dishes. Their first class, Around the World with Vegetarian Cookery , will show you a range of delicious international vegetarian dishes from accross the globe.  Their second class, Look Good and Feel Good – Superfoods, will concentrate more on healthy eating and how to use superfoods without compromising on taste, Sarah and Marise will also be offering nutritional advice. 
 
STUDENT NEWS: Student opens awards winner restaurant in Instanbul
Esen Hunal BlakeEsen Hunal Blake graduated from Leiths 3 years ago. After working in restaurants in London for 6 months she returned to Turkey to establish her own restaurant, a French Brasserie called 'La Brise', with her family in Istanbul. Since it opened 'La Brise' has became one of the most popular restaurants in Istanbul and is full to its 50 cover capacity every night. Esen has had amazing reviews from newspapers and magazines, including featuring twice in 'Time Out Istanbul' as well as being invited to write a column for one of the biggest newspapers in Turkey. As head-chef of the restaurant it is a great boost for her, "I have a very young kitchen staff; 1 sous chef, 2 chef de parties and a steward all under the age of 27. I'm working 6 days a week, getting really tired but still enjoying it so much", says Esen.

La Brise is now going into its' third year and every year the business is growing. "6 months ago we had a 'Chaine des Rotisseurs' dinner in the restaurant, then, 2 months later, they decided that I should become a 'Chef des Rotisseur' and gave me 'Chaine des Rotisseurs Ribbon'. I'm really having the time of my life thanks to Leiths." says Esen. "I got married last year with my boyfirend, who I've been with since I was at Leiths; so as you can see Leiths was a very good start for my life, thanks for everything, I hope to see you soon!" adds Esen.
 
GREAT BRITISH BAKE OFF- BBC Looking for Amateur Bakers
Do you love home baking and fancy putting your skills to the test?  BBC Two is looking for amateur bakers across the country to take part in a new prime time series, 'The Great British Bake Off'. If you're interested and would like to find out more, email baking@loveproductions.co.uk or call 020 7067 4855.  NB To apply you must be over 16 on 1 May 2010. As an 'amateur baker' your main source of income cannot come from commercial baking and you cannot have ever worked full-time as a baker or chef. So I'm afraid it's not open to professional students but if you have friends who are keen home bakers do pass on the news.

WE ARE LOOKING FOR FEEDBACK AND IDEAS FROM FORMER STUDENTS

Following the huge response to our new food writing course, we are in talks with Lulu Grimes to see if we can add more dates and we hope to be launching a food styling class as well. After talking to former Diploma students, we are wondering if there are more classes our graduates would like? Suggestions so far are days covering the more modern dishes today's students learn,  presentation skills and ways to update your cooking.
